Both the roots and leaves ( turnip greens) are great sources of vitamin C. The leaves contain even higher nutrient quantities than the roots such as vit.K, folate and provitamin A and are safe to eat.

Eaten raw, they will have a very bitter flavor, but once cooked, they have sweetened for eating.

Turnips are an ideal potato replacement as they have a similar texture.They can be peeled and prepared in exactly the same way as you would potatoes.  They can easily replace potatoes in dishes such as gratins and mashes, and you can even twice bake them or cook them as fries.
